Parchment Bag Greek Chicken

If you are looking for a quick, easy, AND healthy meal we’ve got you covered 😃. Deb’s friend suggested this recipe and it did not disappoint! It took less than 10 minutes to prep but tasted like you spent the afternoon cooking. You can use chicken or fish as the protein, but Deb used chicken. Don’t have time to cook tonight? No worries, just call Deb. She has about 3 pounds of leftovers from last night 😉

Here’s how to make it: Whisk together 1/4 cup EVOO, 1 tbs lemon zest and 1 tbs lemon juice, 3 tbs white wine, 1 tsp red pepper flakes, 2 cloves of garlic chopped, 2 tsp oregano, salt and pepper. Marinate four 6oz pieces of white fish OR four 6oz pieces of boneless, skinless chicken breast in the mixture for ~30 minutes. Combine 1 cup feta, 1 cup cherry tomatoes, 1 cup olives, 1 small red onion chopped, and 1 cup of parsley tops with a drizzle of EVOO and salt and pepper. Fill parchment bags with this mixture, then top with fish or chicken and sliced lemon, roll tightly to seal and roast 20 minutes at 425. Enjoy!
